Vegan Black Forest Cake



Ingredients
For the chocolate cake:

  • 1 1/3 cup (gluten-free) flour * (175 g)
  • 3 tbsp cornstarch (25 g)
  • 1/2 cup raw cane sugar or erythritol (100 g)
  • 5 tbsp cocoa (30 g)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 pinch of salt
  • 5 tbsp neutral oil (60 ml)
  • 200 ml sparkling water (or plant-based milk)
  • 2 tsp apple cider vinegar

For the cherry compote:

  • 12 oz cherries (350 g) canned
  • 1/4 cup raw cane sugar or erythritol (50 g)
  • 3 1/2 tbsp cornstarch (30 g)
  • 1 cup juice from the cherries (230 ml)

For the cream:

  • 2 cups plant-based cream (500 ml)
  • 2 packs of cream stabilizer
  • 1/2 tsp ground bourbon vanilla
