Sesame Crusted Hoisin Tofu Bowls



INGREDIENTS
SESAME CRUSTED TOFU

  • 7 ounces (200g) firm tofu
  • 2 tbsp (32g) hoisin sauce (homemade or store-bought)
  • 2 tbsp (30ml) soy sauce
  • 3/4 cup (107g) rice flour
  • 1 tbsp (9g) cornstarch
  • 1/4 cup (60ml) water
  • 1/4 cup (38g) raw sesame seeds
  • 3 tbsp (23g) breadcrumbs

THE REST

  • 1 (500g) sweet potato
  • 1 tsp (5ml) oil
  • 1/4 tsp ground cumin
  • 1/8 tsp ground chili (1/4 tsp if you like it very spicy)
  • 1 cup (170g) quinoa
  • 2 cups (470ml) water
  • 1 tbsp (16g) hoisin sauce
  • 1/4 tsp salt
  • 2 cups greens: spinach, kale, or bok choi
  • 1 avocado, sliced
